 WE always roast for freshness, WE give our customers the option to have it shipped that day of roast or the next 24-48 hours. The reason behind it is with coffee, WE think of it for the next couple of days like the aging process of fine wine but within days. This is called off-gassing. An organic process of the beans that release around 90% carbon dioxide with a small percentage of carbon monoxide, nitrogen and a minute percentage of organic volatile compounds. During this off-gassing process, it is where flavors and aromatics meet making it the final development of the beans profile. Starting from after its roast date by letting it off-gas for at least 12hrs. Here is where you will be able to experiment with each day that passes to know when it’s just right for you to start enjoying at will. If one were to experiment sooner, they’d be met with a delicious aroma but a very overpowering taste of acidic and bitter flavors as those levels need to come down to be palatable. WE share this information with you in hopes it betters your experience with WOTR  and by waiting after the 12hr mark. With that being said,
